Today I opened my fridge and found many carrots in there. So I decided to make a creamy carrot soup for breakfast today. This recipe is very simple and delicious. Carrot is the nutritious veggie that kids love to eat. Do your kids love carrots? how you like to incorporate them into a healthy diet ?
CREAMY CARROT SOUP
INGREDIENTS
▶️ 3 large carrots, peeled and washed
▶️ 50 ml thicken cream
▶️ 50 ml milk
▶️ 2 tbsp extra virgin olive oil
▶️ 1 tsp brown onion, chopped
▶️ 1 tsp garlic chopped
▶️ salt and pepper to taste
▶️ chopped parley and pumpkin seeds tp garnish
Method
▶️ In a medium pot, slice all carrots and place them in the pot. Add some water and bring it to boil for 15 minutes or until carrot is soft
▶️ Remove from the heat and strain well.
▶️ In a small saucepan. Add olive oil,garlic and onion and bring it over low and medium heat and stir well. Add cooked carrots and Stir constantly for 1-2 minutes.
▶️ Add milk and cream and stir well.
▶️ In a blender, blend it until smooth.
▶️ Season it with salt and pepper to taste
▶️ garnish with chopped parsley and pumpkin seeds
