Today I opened my fridge and found many carrots in there. So I decided to make a creamy carrot soup for breakfast today. This recipe is very simple and delicious. Carrot is the nutritious veggie that kids love to eat. ⁣ Do your kids love carrots? how you like to incorporate them into a healthy diet ?⁣



▶️ 3 large carrots, peeled and washed ⁣

▶️ 50 ml thicken cream⁣

▶️ 50 ml milk ⁣

▶️ 2 tbsp extra virgin olive oil⁣

▶️ 1 tsp brown onion, chopped ⁣

▶️ 1 tsp garlic chopped⁣

▶️ salt and pepper to taste ⁣

▶️ chopped parley and pumpkin seeds tp garnish ⁣

Method ⁣

▶️ In a medium pot, slice all carrots and place them in the pot. Add some water and bring it to boil for 15 minutes or until carrot is soft⁣

▶️ Remove from the heat and strain well.⁣

▶️ In a small saucepan. Add olive oil,garlic and onion and bring it over low and medium heat and stir well. Add cooked carrots and Stir constantly for 1-2 minutes.⁣

▶️ Add milk and cream and stir well.

▶️ In a blender, blend it until smooth.⁣

▶️ Season it with salt and pepper to taste ⁣

▶️ garnish with chopped parsley and pumpkin seeds ⁣
